Ingredients required for making Tomato coconut chutney

  • 6 tomatoes
  • ½ cup grated coconut
  • 8-10 shallots/ 1 medium-sized onion
  • 6 cloves of garlic
  • 5-6 red chillies
  • 1 tsp of mustard seeds
  • ¾ tsp of urad dal
  • 2 sprigs of curry leaves
  • 3 tbsp of oil
  • Salt as required
  • Water as required

Let’s make Tomato coconut chutney

  • Heat 2 tbsp of oil in a pan
  • Saute the 4-5 red chillies until they puff up. Then remove it from the oil.
  • Add the shallots/onion and garlic to the oil and saute them until they turn aromatic.
  • Add the diced tomatoes to this and cook until the tomatoes become soft and mushy.
  • Now add the grated coconut, one sprig of curry leaves and sauteed red chillies and saute it for 5 min.
  • Please remove it from the heat and wait for it to cool down.
  • Transfer the ingredients into a blender and grind them into a thick, coarse paste by adding little amount of water.
  • Now add oil to a pan to temper the tomato coconut chutney.
  • Add the mustard seeds to the hot oil and wait for them to finish spluttering.
  • Now add the curry leaves, immediately transfer the tempering to the tomato coconut chutney, and mix well.
  • Delicious and healthy tomato coconut chutney is ready!
