- 6 tomatoes
- ½ cup grated coconut

- 5-6 red chillies

- ¾ tsp of urad dal
- 2 sprigs of curry leaves
- 3 tbsp of oil
- Salt as required
- Water as required
Let’s make Tomato coconut chutney
- Heat 2 tbsp of oil in a pan
- Saute the 4-5 red chillies until they puff up. Then remove it from the oil.
- Add the shallots/onion and garlic to the oil and saute them until they turn aromatic.
- Add the diced tomatoes to this and cook until the tomatoes become soft and mushy.
- Now add the grated coconut, one sprig of curry leaves and sauteed red chillies and saute it for 5 min.
- Please remove it from the heat and wait for it to cool down.
- Transfer the ingredients into a blender and grind them into a thick, coarse paste by adding little amount of water.
- Now add oil to a pan to temper the tomato coconut chutney.
- Add the mustard seeds to the hot oil and wait for them to finish spluttering.
- Now add the curry leaves, immediately transfer the tempering to the tomato coconut chutney, and mix well.
