- Two tablespoons of oil

- Half a teaspoon of Kashmiri red chilli powder
- A half-inch cinnamon stick
- Half a teaspoon of sugar
- One and a half cups of water
- Two tablespoons of coriander leaves.
- Salt as required
Preparation
- Now that we have all the ingredients needed to prepare Tomato kurma with us let’s start with the preparation.
- First, let’s start with preparing the masala paste needed for the preparation of this recipe.
- Take a blender and add the coconut and cashews into it.
- Just pulse both for two seconds and add green chillies, fennel seeds, coriander seeds and roasted chana dal into the mixture.
- Pulse the ingredients for another two seconds or until all the ingredients in the mixture get evenly dispersed.
- Now add ½ a cup of water into this mixture little at a time and blend the ingredients into a smooth paste and keep it aside.
- Heat some oil on a pan at medium heat.
- Once the oil gets hot enough, add the mustard seeds, urad dal and cinnamon to the oil.
- Now, when the spices are added to it attains a nice fragrance; throw some curry leaves into it.
- Once the spluttering finish, add finely chopped onions to the hot oil.
- Saute this for a few minutes until the onion turns translucent
- Now, add the chopped tomatoes to your mixture and saute it until the tomatoes become mushy in texture.
- Once the tomatoes start to break down and become mushy, add the masala powders like turmeric, chilli powder, sugar and salt.
- Saute this mixture until you see the oil gets separated.
- At this point, add the already prepared masala paste to this mixture.
- Add an adequate amount of water and adjust the consistency.
- Now incorporate everything well.
- Cover and cook this mixture for almost 15 minutes.
- Now garnish your tomato kurma with the chopped coriander leaves on it. Voila, your tomato kurma is ready to entice you!
