Ingredients you require to wow your kids

One bunch of spinach leaves (Approximately)
3 large potatoes
2 medium-sized onions (finely chopped)
½ cup of coarsely grated paneer
1 teaspoon of ginger paste
2 green chillies (finely chopped)
3 tablespoons of coriander leaves
2 tablespoons of maida
1 tablespoon of corn flour
1 ½ cup of breadcrumbs
¼ teaspoon of Garam masala powder
½ teaspoon of coriander powder
1 teaspoon of black pepper powder
1 teaspoon of red chilli powder
1 pinch of turmeric powder
Salt according to taste.
Water as required
Oil as required

Firstly, let’s prep some ingredients.

Prep your spinach

  • Give a proper bath to your spinach leaves
  •  Drain, dry and chop them finely

Now comes the potatoes

  • Wash your potatoes and boil them until fork tender
  • Place them in an ice bath
  • Peel their skin off and mash them coarsely

Now, let’s make our baby spinach filling.

  • Heat one tablespoon of oil in a Kadai pan and add the ginger paste to it
  • Once the ginger becomes aromatic, add your onion and sauté them
  • When the onion becomes translucent, add all the masala powders one by one into the onions and fry.
  • When spices turn aromatic, add the mashed potato to the onions and mix well.
  • After properly mixing the potatoes, add the shredded paneer into the mixture
  • Once they get incorporated, add the finely chopped baby spinach leaves into the mixture and mix well.
  • Heat the mixture until the spinach gets cooked.
  • Now add the chopped coriander leaves and mix well.
  • Then, take the mixture off the heat and allow it to cool down.

Let’s dress our baby spinach mixture

  •  Add maida flour, corn flour and salt into a bowl.
  • Slowly add water in and make a batter with medium thickness
  • Spread the breadcrumbs on a plane surface.
  • Take a small ball of the prepared mixture and shape it into a medium-sized disk.
  • Coat both sides of the disk in the batter and then drop them into the breadcrumbs.
  • Once evenly coated, take the now-dressed baby spinach mixture and allow it to rest in the fridge for 15 minutes.

Make your own delicious baby spinach cutlets

  • Heat up the oil of your choice in a Kadai pan.
  • Take each dressed baby spinach mixture, carefully place them in the Kadai, and shallow fry them.
  • Fry on both sides until it turns golden brown in colour
  • Take it off the oil and rest them on a piece of kitchen tissue to drain out excess oil within it.
  • Now, serve this crispy, delicious and nutritious baby spinach cutlet with mint chutney or good old tomato sauce.
