  • Incorporate these well with the mashed potatoes and refrigerate them for at least thirty minutes.
  • Now, peel the boiled eggs and cut them into a desirable shape. You can either halve or quarter an egg.
  • To make the chops, take the potato mix and form it into a considerably thick round patty. Now place the egg in the middle of this patty and fold the potato mix around it.
  • Shape it until the egg is completely covered in the mixture and set it aside.
  • Repeat this process until all the eggs are covered in the mixture. Now refrigerate it to prevent it from sticking to your hands.
  • Once the egg begins to hold its shape without sticking to your hands, take it out of the fridge.
  • Beat the remaining egg until frothy and spread semolina onto a flat surface.
  • Dip the coated eggs into the egg and dredge it in semolina until it is fully covered. Repeat this step until all the eggs are covered.
  • Heat oil on a nonstick pan enough for shallow frying.
  • Fry each of your coated eggs until crispy golden, and voila, your goan egg chop is ready to be enjoyed.
