Ingredients required

  • Tomatoes: 2 medium-sized ones
  • Curd: ½ cup
  • Grated coconut: ½ cup
  • Green chilly: Five
  • Dry red chilli: Three
  • Mustard seeds: 1 tsp.
  • Curry leaves: 1 sprig
  • Coconut oil: 4 tbsp.
  • Salt: According to taste

  •  First, take the tomatoes, clean them and cut them into small cubes.
  • Now, add the grated coconut, mustard seeds and green chilly into a grinder and coarsely grind them.
  • Add 2 tbsp. of coconut oil into a pan and heat it up on medium heat.
  • Add the chopped tomatoes to the pan and then saute them for three minutes.
  • When the tomatoes turn mushy, add the ground tomato paste and curd into it and incorporate them well.
  • Add enough salt to the mixture and get it off the heat.
  • Heat 2 tbsp. of coconut oil in a pan.
  • When the oil is hot enough, add the mustard seeds and wait for them to splutter.
  • Once the seeds finish spluttering, add the dry red chillies and curry leaves to the oil and remove it from the heat.
  • Pour this tadka over the mixture, and your delicious tomato pachadi is ready to be devoured.
